Creamy Herb Chicken with Mashed Potatoes

Ingredients

For the Chicken

  • 2 large chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp paprika
  • Salt and black pepper to taste

For the Cream Sauce

  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 tsp dried parsley
  • Salt and pepper to taste

For the Mashed Potatoes

  • 4 large potatoes, peeled and cubed
  • 3 tbsp butter
  • ½ cup milk
  • Salt to taste

Instructions

  1. Boil the potatoes until tender. Mash with butter, milk, and salt until smooth.
  2. Season the chicken breasts with garlic powder, paprika, salt, and pepper.
  3. Heat olive oil in a skillet and cook the chicken for 5–6 minutes per side until golden and cooked through.
  4. Remove the chicken and slice it.
  5. In the same skillet, melt butter and sauté garlic for 30 seconds.
  6. Add the cream, Parmesan cheese, parsley, salt, and pepper. Simmer for 2–3 minutes until slightly thickened.
  7. Place the mashed potatoes on a serving plate.
  8. Arrange the sliced chicken on top and drizzle generously with the creamy herb sauce.
  9. Garnish with fresh microgreens or parsley.
