Creamy Herb Chicken with Mashed Potatoes
Ingredients
For the Chicken
- 2 large chicken breasts
- 1 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp paprika
- Salt and black pepper to taste
For the Cream Sauce
- 1 tbsp butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- ¼ cup grated Parmesan cheese
- 1 tsp dried parsley
- Salt and pepper to taste
For the Mashed Potatoes
- 4 large potatoes, peeled and cubed
- 3 tbsp butter
- ½ cup milk
- Salt to taste
Instructions
- Boil the potatoes until tender. Mash with butter, milk, and salt until smooth.
- Season the chicken breasts with garlic powder, paprika, salt, and pepper.
- Heat olive oil in a skillet and cook the chicken for 5–6 minutes per side until golden and cooked through.
- Remove the chicken and slice it.
- In the same skillet, melt butter and sauté garlic for 30 seconds.
- Add the cream, Parmesan cheese, parsley, salt, and pepper. Simmer for 2–3 minutes until slightly thickened.
- Place the mashed potatoes on a serving plate.
- Arrange the sliced chicken on top and drizzle generously with the creamy herb sauce.
- Garnish with fresh microgreens or parsley.
