Caramel Pear Cheesecake
Ingredients
For the Crust
- 200 g digestive biscuits, crushed
- 80 g melted butter
For the Cheesecake
- 500 g cream cheese
- 100 g sugar
- 2 eggs
- 1 tsp vanilla extract
- 150 ml heavy cream
For the Caramel Pears
- 2 pears, peeled
- 4 tbsp brown sugar
- 2 tbsp butter
- 2 tbsp honey
Decoration
- Chopped pecans or walnuts
- Extra caramel sauce
Instructions
- Mix biscuit crumbs with melted butter and press into a cake pan.
- Bake at 170°C (340°F) for 10 minutes.
- Beat cream cheese, sugar, vanilla, eggs, and cream until smooth.
- Pour over the crust and bake for 45 minutes.
- Let cool completely, then refrigerate for 4 hours.
- In a saucepan, melt butter and brown sugar.
- Add pears and cook until soft and caramelized.
- Place a whole caramel pear on top of the cheesecake.
- Drizzle generously with caramel sauce and sprinkle with chopped nuts.
