Berry Cheesecake Parfait

Ingredients

For the Crumble Layer

  • 200 g digestive biscuits, crushed
  • 60 g melted butter

For the Cheesecake Cream

  • 250 g cream cheese, softened
  • 200 ml whipping cream
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract

For the Berry Layer

  • 1 cup strawberries, diced
  • 1 cup raspberries
  • 2 tbsp berry jam
  • 1 tbsp lemon juice

For Decoration

  • Fresh strawberries
  • Fresh raspberries
  • Chocolate cookie crumbs
  • Chocolate drizzle
  • Mint leaves

Instructions

  1. Mix the crushed biscuits with melted butter.
  2. Beat the cream cheese, powdered sugar, and vanilla until smooth.
  3. Whip the cream until fluffy and fold it into the cream cheese mixture.
  4. Mix the berries with jam and lemon juice.
  5. In a large dessert glass, add a layer of biscuit crumbs.
  6. Add a layer of berry mixture.
  7. Pipe or spoon the cheesecake cream on top.
  8. Repeat the layers once more.
  9. Decorate with fresh berries, cookie crumbs, chocolate drizzle, and mint leaves.
  10. Chill for 1 hour before serving.
