Creamy Mushroom Stuffed Chicken Rolls
Ingredients
- 2 large chicken breasts
- 8 oz (225g) mushrooms, sliced
- 1 cup mozzarella cheese, shredded
- 2 tbsp butter
- 2 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- Fresh parsley, chopped
Instructions
- Slice each chicken breast horizontally and pound until thin.
- Season both sides with salt, pepper, and Italian seasoning.
- Sauté the mushrooms in 1 tbsp butter until golden. Let cool slightly.
- Place mushrooms and mozzarella cheese on each chicken breast.
- Roll tightly and secure with toothpicks.
- Heat olive oil in a skillet over medium-high heat.
- Sear the chicken rolls until golden brown on all sides.
- Add the remaining butter and garlic, cooking for 1 minute.
- Pour in the chicken broth and heavy cream.
- Cover and simmer for 15–20 minutes, or until the chicken is fully cooked.
- Spoon the creamy mushroom sauce over the chicken rolls.
- Garnish with fresh parsley and serve hot.
