Creamy Mushroom Stuffed Chicken Rolls

Ingredients

  • 2 large chicken breasts
  • 8 oz (225g) mushrooms, sliced
  • 1 cup mozzarella cheese, shredded
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • Fresh parsley, chopped

Instructions

  1. Slice each chicken breast horizontally and pound until thin.
  2. Season both sides with salt, pepper, and Italian seasoning.
  3. Sauté the mushrooms in 1 tbsp butter until golden. Let cool slightly.
  4. Place mushrooms and mozzarella cheese on each chicken breast.
  5. Roll tightly and secure with toothpicks.
  6. Heat olive oil in a skillet over medium-high heat.
  7. Sear the chicken rolls until golden brown on all sides.
  8. Add the remaining butter and garlic, cooking for 1 minute.
  9. Pour in the chicken broth and heavy cream.
  10. Cover and simmer for 15–20 minutes, or until the chicken is fully cooked.
  11. Spoon the creamy mushroom sauce over the chicken rolls.
  12. Garnish with fresh parsley and serve hot.
