Blackberry Cheesecake
Ingredients
For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 2 tbsp sugar
For the Filling:
- 24 oz (680g) cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
For the Blackberry Topping:
- 2 cups fresh blackberries
- 1/3 cup sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
- Preheat oven to 325°F (165°C).
- Mix graham cracker crumbs, butter, and sugar. Press into a springform pan.
- Bake the crust for 10 minutes and let cool.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, then vanilla and sour cream.
- Pour filling over the crust.
- Bake for 50–60 minutes until the center is slightly set.
- Cool completely, then refrigerate for at least 4 hours.
- For the topping, cook blackberries, sugar, and lemon juice over medium heat.
- Stir in the cornstarch mixture and cook until thickened.
- Let cool, then spread over the cheesecake.
- Garnish with fresh blackberries before serving.
