Falafel (Crispy Chickpea Fritters)

Ingredients

  • 2 cups dried chickpeas (soaked overnight)
  • 1 small onion, chopped
  • 4 cloves garlic
  • 1 cup fresh parsley
  • ½ cup fresh cilantro
  • 1 tsp cumin
  • 1 tsp coriander
  • ½ tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp baking powder
  • 2 tbsp flour
  • Oil for frying

Instructions

  1. Drain the soaked chickpeas well.
  2. Add chickpeas, onion, garlic, parsley, and cilantro to a food processor.
  3. Blend until finely minced but not completely smooth.
  4. Add cumin, coriander, paprika, salt, pepper, baking powder, and flour.
  5. Mix well and let the mixture rest for 30 minutes.
  6. Shape into small balls or patties.
  7. Heat oil to 180°C (350°F).
  8. Fry for 3–4 minutes until golden brown and crispy.
  9. Drain on paper towels and serve warm.
