Creamy Tuscan Chicken
Ingredients:
- 4 chicken breasts
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- Salt and black pepper to taste
- 1 tsp Italian seasoning
Instructions:
- Season chicken with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet and cook chicken until golden and fully cooked. Remove and set aside.
- In the same pan, sauté garlic for 30 seconds.
- Add cream and Parmesan, stirring until smooth.
- Add tomatoes and spinach; cook until spinach wilts.
- Return chicken to the pan and simmer for 3–4 minutes.
- Serve hot with pasta, rice, or mashed potatoes.
