Cheesy Baked Eggplant Casserole

Ingredients

  • 2 large eggplants, sliced
  • 2 cups marinara sauce
  • 1½ cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • Salt and black pepper
  • Fresh basil for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Brush eggplant slices with olive oil and season with salt and pepper.
  3. Bake for 20 minutes until tender.
  4. Spread a layer of marinara sauce in a baking dish.
  5. Add a layer of eggplant slices.
  6. Sprinkle mozzarella and Parmesan cheese.
  7. Repeat the layers until all ingredients are used.
  8. Top with remaining cheese.
  9. Bake for 20–25 minutes until golden and bubbly.
  10. Garnish with fresh basil before serving.
