Caramel Pear Cheesecake

Ingredients

For the Crust

  • 200 g digestive biscuits, crushed
  • 80 g melted butter

For the Cheesecake

  • 500 g cream cheese
  • 100 g sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 150 ml heavy cream

For the Caramel Pears

  • 2 pears, peeled
  • 4 tbsp brown sugar
  • 2 tbsp butter
  • 2 tbsp honey

Decoration

  • Chopped pecans or walnuts
  • Extra caramel sauce

Instructions

  1. Mix biscuit crumbs with melted butter and press into a cake pan.
  2. Bake at 170°C (340°F) for 10 minutes.
  3. Beat cream cheese, sugar, vanilla, eggs, and cream until smooth.
  4. Pour over the crust and bake for 45 minutes.
  5. Let cool completely, then refrigerate for 4 hours.
  6. In a saucepan, melt butter and brown sugar.
  7. Add pears and cook until soft and caramelized.
  8. Place a whole caramel pear on top of the cheesecake.
  9. Drizzle generously with caramel sauce and sprinkle with chopped nuts.
