Berry Cheesecake with Dark Berry Glaze
Ingredients
For the Crust
- 200 g chocolate cookies, crushed
- 90 g melted butter
For the Cheesecake Filling
- 500 g cream cheese, softened
- 200 ml heavy cream
- 100 g powdered sugar
- 1 tsp vanilla extract
- 2 eggs
For the Berry Glaze
- 1 cup blackberries
- 1 cup raspberries
- ½ cup cherries
- 3 tbsp sugar
- 1 tbsp lemon juice
For Decoration
- Fresh raspberries
- Fresh blackberries
- Cherries
- Pomegranate seeds (optional)
Instructions
- Mix the crushed chocolate cookies with melted butter and press into a springform pan.
- Bake at 170°C (340°F) for 10 minutes and let cool.
- Beat cream cheese, sugar, vanilla, and eggs until smooth.
- Fold in the heavy cream.
- Pour over the crust and bake for 45–50 minutes.
- Cool completely, then chill for at least 4 hours.
- Cook the berries, sugar, and lemon juice for 5 minutes until thick and glossy.
- Let the sauce cool slightly and pour over the cheesecake.
- Decorate with fresh berries and cherries before serving.
