Berry Cheesecake with Dark Berry Glaze

Ingredients

For the Crust

  • 200 g chocolate cookies, crushed
  • 90 g melted butter

For the Cheesecake Filling

  • 500 g cream cheese, softened
  • 200 ml heavy cream
  • 100 g powdered sugar
  • 1 tsp vanilla extract
  • 2 eggs

For the Berry Glaze

  • 1 cup blackberries
  • 1 cup raspberries
  • ½ cup cherries
  • 3 tbsp sugar
  • 1 tbsp lemon juice

For Decoration

  • Fresh raspberries
  • Fresh blackberries
  • Cherries
  • Pomegranate seeds (optional)

Instructions

  1. Mix the crushed chocolate cookies with melted butter and press into a springform pan.
  2. Bake at 170°C (340°F) for 10 minutes and let cool.
  3. Beat cream cheese, sugar, vanilla, and eggs until smooth.
  4. Fold in the heavy cream.
  5. Pour over the crust and bake for 45–50 minutes.
  6. Cool completely, then chill for at least 4 hours.
  7. Cook the berries, sugar, and lemon juice for 5 minutes until thick and glossy.
  8. Let the sauce cool slightly and pour over the cheesecake.
  9. Decorate with fresh berries and cherries before serving.
