Spicy Korean Cheesy Chicken

Ingredients

  • 1½ lb (700 g) boneless chicken thighs, cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 tbsp gochujang (Korean chili paste)
  • 1 tbsp gochugaru (Korean chili flakes, optional)
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 cups shredded mozzarella cheese
  • 1 tbsp sesame seeds
  • 2 tbsp chopped green onions or parsley

👩‍🍳 Instructions

  1. In a bowl, mix the gochujang, soy sauce, honey, brown sugar, rice vinegar, sesame oil, garlic, and ginger.
  2. Add the chicken pieces and coat them well. Let them marinate for 20–30 minutes.
  3. Heat the vegetable oil in a large skillet over medium-high heat.
  4. Cook the chicken for 8–10 minutes, stirring occasionally, until browned and fully cooked.
  5. Pour in any remaining marinade and simmer for 2–3 minutes until the sauce becomes thick, glossy, and sticky.
  6. Sprinkle the mozzarella evenly over the chicken.
  7. Cover the skillet for 2–3 minutes, or place it under the broiler until the cheese is melted and bubbly.
  8. Garnish with sesame seeds and chopped green onions or parsley. Serve immediately with steamed rice.
