Spicy Korean Cheesy Chicken
Ingredients
- 1½ lb (700 g) boneless chicken thighs, cut into bite-sized pieces
- 2 tbsp vegetable oil
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 2 tbsp gochujang (Korean chili paste)
- 1 tbsp gochugaru (Korean chili flakes, optional)
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 2 cups shredded mozzarella cheese
- 1 tbsp sesame seeds
- 2 tbsp chopped green onions or parsley

- In a bowl, mix the gochujang, soy sauce, honey, brown sugar, rice vinegar, sesame oil, garlic, and ginger.
- Add the chicken pieces and coat them well. Let them marinate for 20–30 minutes.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Cook the chicken for 8–10 minutes, stirring occasionally, until browned and fully cooked.
- Pour in any remaining marinade and simmer for 2–3 minutes until the sauce becomes thick, glossy, and sticky.
- Sprinkle the mozzarella evenly over the chicken.
- Cover the skillet for 2–3 minutes, or place it under the broiler until the cheese is melted and bubbly.
- Garnish with sesame seeds and chopped green onions or parsley. Serve immediately with steamed rice.
