Grilled Chicken Salad Bowl

Ingredients

  • 2 boneless chicken breasts
  • 4 cups mixed lettuce
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1 carrot, shredded
  • ¼ red onion, sliced
  • Fresh cilantro or parsley
  • 1 cup cooked couscous or rice

For the Chicken Marinade

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • ½ tsp cumin
  • Salt and black pepper

Dressing

  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper

Instructions

  1. Marinate the chicken for at least 30 minutes.
  2. Grill for 5–6 minutes per side until fully cooked.
  3. Slice the chicken into strips.
  4. Arrange the lettuce, cucumber, tomatoes, carrot, onion, and couscous in a large bowl.
  5. Whisk together the dressing ingredients and drizzle over the salad.
  6. Top with the grilled chicken and serve immediately.
