Cheesy Stuffed Baked Potatoes with Ground Beef

Ingredients

  • 7–8 medium potatoes
  • 250 g (½ lb) ground beef
  • 1–2 tbsp vegetable oil
  • 1 red bell pepper, diced
  • 1–2 green peppers, diced
  • 1 garlic clove, minced
  • 1 onion, finely chopped
  • 1 tbsp tomato paste
  • Salt, black pepper, and paprika to taste
  • 1 tsp butter for each potato
  • 2 cups shredded mozzarella or cheddar cheese
  • Fresh parsley, chopped (optional)

Instructions

  1. Wash the potatoes well and place them on a baking tray.
  2. Brush with a little vegetable oil.
  3. Bake at 400°F (200°C) for 35–40 minutes, or until tender. (You can partially boil them first to reduce baking time.)
  4. Meanwhile, heat the oil in a skillet and cook the ground beef until browned.
  5. Add the onion, garlic, red bell pepper, and green peppers. Cook until softened.
  6. Stir in the tomato paste, salt, black pepper, and paprika. Cook for 2–3 more minutes.
  7. Cut a slit in the top of each baked potato and gently fluff the inside with a fork.
  8. Add 1 teaspoon butter to each potato and mix it into the potato flesh.
  9. Fill each potato with the beef mixture.
  10. Top generously with shredded cheese.
  11. Return to the oven for 5–8 minutes, or until the cheese is melted and golden.
  12. Garnish with fresh parsley and serve hot.
