Cheesy Stuffed Baked Potatoes with Ground Beef
Ingredients
- 7–8 medium potatoes
- 250 g (½ lb) ground beef
- 1–2 tbsp vegetable oil
- 1 red bell pepper, diced
- 1–2 green peppers, diced
- 1 garlic clove, minced
- 1 onion, finely chopped
- 1 tbsp tomato paste
- Salt, black pepper, and paprika to taste
- 1 tsp butter for each potato
- 2 cups shredded mozzarella or cheddar cheese
- Fresh parsley, chopped (optional)
Instructions
- Wash the potatoes well and place them on a baking tray.
- Brush with a little vegetable oil.
- Bake at 400°F (200°C) for 35–40 minutes, or until tender. (You can partially boil them first to reduce baking time.)
- Meanwhile, heat the oil in a skillet and cook the ground beef until browned.
- Add the onion, garlic, red bell pepper, and green peppers. Cook until softened.
- Stir in the tomato paste, salt, black pepper, and paprika. Cook for 2–3 more minutes.
- Cut a slit in the top of each baked potato and gently fluff the inside with a fork.
- Add 1 teaspoon butter to each potato and mix it into the potato flesh.
- Fill each potato with the beef mixture.
- Top generously with shredded cheese.
- Return to the oven for 5–8 minutes, or until the cheese is melted and golden.
- Garnish with fresh parsley and serve hot.
