Shrimp Alfredo Stuffed Lasagna Roll-Ups
Ingredients
For the Roll-Ups
- 12 lasagna noodles
- 450 g (1 lb) large shrimp, peeled and deveined
- 2 tbsp butter
- 3 garlic cloves, minced
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 egg
- 2 tbsp fresh parsley, chopped
For the Alfredo Sauce
- 3 tbsp butter
- 3 garlic cloves, minced
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- Salt and black pepper, to taste
- ½ tsp garlic powder (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to the package directions until al dente. Drain and lay them flat on parchment paper.
- In a skillet, melt the butter over medium heat. Add the garlic and cook for 30 seconds. Add the shrimp, Italian seasoning, salt, and pepper. Cook for 2–3 minutes until just pink. Chop the shrimp into bite-sized pieces.
- In a bowl, combine the ricotta, mozzarella, Parmesan, egg, parsley, and chopped shrimp.
- Spread the filling evenly over each lasagna noodle and roll them up tightly.
- To make the Alfredo sauce, melt the butter in a saucepan. Add the garlic and cook for 30 seconds. Pour in the heavy cream and simmer for 3–4 minutes. Stir in the Parmesan until smooth. Season with salt, pepper, and garlic powder.
- Spread a layer of Alfredo sauce in a baking dish. Arrange the lasagna roll-ups seam-side down.
- Pour the remaining Alfredo sauce over the top and sprinkle with extra mozzarella and Parmesan cheese.
- Bake for 25–30 minutes, until bubbly and golden. Broil for 2–3 minutes for a lightly browned top.
- Garnish with fresh parsley and serve hot.
