Creamy Garlic Butter Salmon with Shrimp & Spinach
Ingredients
For the Salmon & Shrimp
- 4 salmon fillets (about 6 oz / 170 g each)
- 12 oz (340 g) large shrimp, peeled and deveined
- 2 tbsp olive oil
- 2 tbsp butter
- 4 garlic cloves, minced
- 1 tsp paprika
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
For the Creamy Spinach Sauce
- 2 tbsp butter
- 3 garlic cloves, minced
- 1½ cups heavy cream
- ¾ cup grated Parmesan cheese
- 3 cups fresh spinach
- 1 tsp Dijon mustard (optional)
- 1 tbsp lemon juice
- Salt and black pepper, to taste
- Fresh parsley, chopped
Instructions
- Season the salmon with paprika, Italian seasoning, salt, and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat. Sear the salmon for 4–5 minutes per side until golden. Remove and keep warm.
- In the same skillet, cook the shrimp for 1–2 minutes per side until pink. Remove.
- Melt the butter, then sauté the garlic until fragrant.
- Pour in the heavy cream and simmer for 2–3 minutes.
- Stir in the Parmesan cheese until melted and smooth.
- Add the spinach and cook until wilted.
- Stir in the lemon juice and Dijon mustard (if using). Adjust the seasoning.
- Return the salmon to the skillet and spoon the creamy spinach sauce over it.
- Top with the shrimp, garnish with fresh parsley, and serve immediately.
