Peach & Cream Cheese Rustic Tart (Galette)

Ingredients

For the Dough

  • 150 g unsalted butter, softened
  • 50 g sour cream
  • 1 egg
  • 5 tbsp sugar
  • 1 tsp vanilla extract (or 1 packet vanilla sugar)
  • 1 tsp baking powder
  • 300–350 g all-purpose flour
For the Filling
  • 200 g cream cheese (or farmer’s cheese/ricotta)
  • 1 egg yolk
  • 2 tbsp sugar
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 2–3 ripe peaches or nectarines, sliced
For Finishing
  • Powdered sugar
  • Optional: apricot jam for glazing

Instructions

  1. Prepare the dough
    • Beat the softened butter with the sugar until creamy.
    • Add the sour cream, egg, and vanilla.
    • Mix in the flour and baking powder until a soft dough forms.
    • Wrap and chill for 30 minutes.
  2. Make the filling
    • Combine the cream cheese, egg yolk, sugar, cornstarch, and vanilla.
    • Mix until smooth.
  3. Assemble
    • Preheat the oven to 180°C (350°F).
    • Roll the dough into a large circle (about 30 cm).
    • Spread the cream cheese filling in the center, leaving a 5 cm border.
    • Arrange the peach slices on top.
    • Fold the edges of the dough over the filling.
  4. Bake
    • Bake for 35–40 minutes, or until the crust is golden brown.
  5. Finish
    • Cool slightly.
    • Dust generously with powdered sugar.
    • Brush the fruit with warm apricot jam for a glossy finish (optional).
