Peach & Cream Cheese Rustic Tart (Galette)
Ingredients
For the Dough
- 150 g unsalted butter, softened
- 50 g sour cream
- 1 egg
- 5 tbsp sugar
- 1 tsp vanilla extract (or 1 packet vanilla sugar)
- 1 tsp baking powder
- 300–350 g all-purpose flour
For the Filling
- 200 g cream cheese (or farmer’s cheese/ricotta)
- 1 egg yolk
- 2 tbsp sugar
- 1 tbsp cornstarch
- 1 tsp vanilla extract
- 2–3 ripe peaches or nectarines, sliced
For Finishing
- Powdered sugar
- Optional: apricot jam for glazing
Instructions
- Prepare the dough
- Beat the softened butter with the sugar until creamy.
- Add the sour cream, egg, and vanilla.
- Mix in the flour and baking powder until a soft dough forms.
- Wrap and chill for 30 minutes.
- Make the filling
- Combine the cream cheese, egg yolk, sugar, cornstarch, and vanilla.
- Mix until smooth.
- Assemble
- Preheat the oven to 180°C (350°F).
- Roll the dough into a large circle (about 30 cm).
- Spread the cream cheese filling in the center, leaving a 5 cm border.
- Arrange the peach slices on top.
- Fold the edges of the dough over the filling.
- Bake
- Bake for 35–40 minutes, or until the crust is golden brown.
- Finish
- Cool slightly.
- Dust generously with powdered sugar.
- Brush the fruit with warm apricot jam for a glossy finish (optional).
