White Chocolate Raspberry Cheesecake Bars
Ingredients
For the crust:
- 2 cups crushed graham crackers
- 100g melted butter
For the filling:
- 450g cream cheese, softened
- ½ cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 150g white chocolate, melted
- 1 cup fresh raspberries
Instructions
- Preheat oven to 170°C (340°F).
- Mix crushed crackers with melted butter and press into a lined baking pan.
- Bake for 10 minutes and let cool.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, then vanilla and melted white chocolate.
- Pour over the crust.
- Scatter raspberries on top and gently swirl.
- Bake for 30–35 minutes.
- Cool completely and chill for at least 3 hours before slicing.
