White Chocolate Raspberry Cheesecake Bars

Ingredients

For the crust:

  • 2 cups crushed graham crackers
  • 100g melted butter

For the filling:

  • 450g cream cheese, softened
  • ½ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 150g white chocolate, melted
  • 1 cup fresh raspberries

Instructions

  1. Preheat oven to 170°C (340°F).
  2. Mix crushed crackers with melted butter and press into a lined baking pan.
  3. Bake for 10 minutes and let cool.
  4. Beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, then vanilla and melted white chocolate.
  6. Pour over the crust.
  7. Scatter raspberries on top and gently swirl.
  8. Bake for 30–35 minutes.
  9. Cool completely and chill for at least 3 hours before slicing.
