Creamy Mushroom & Spinach Gratin
Ingredients
- 500 g mushrooms, sliced
- 300 g fresh spinach
- 250 ml heavy cream
- 150 ml whole milk
- 2 garlic cloves, minced
- 1 small onion, finely chopped
- 200 g Gruyère cheese, grated
- 100 g mozzarella cheese, shredded
- 50 g Parmesan cheese, grated
- 2 tbsp butter
- 1 tsp fresh thyme
- Salt and black pepper to taste
- Fresh parsley, chopped
Instructions
- Preheat the oven to 190°C (375°F).
- Melt the butter in a large skillet and sauté the onion until soft.
- Add the garlic and mushrooms, cooking until golden.
- Stir in the spinach and cook until just wilted.
- Add the heavy cream, milk, thyme, salt, and pepper. Simmer for 3–4 minutes.
- Transfer the mixture to a buttered baking dish.
- Sprinkle the Gruyère, mozzarella, and Parmesan evenly over the top.
- Bake for 20–25 minutes, then broil for 2–3 minutes until the cheese is golden and bubbling.
- Garnish with chopped parsley and serve hot.
