Shrimp & Garlic Butter Rice
Ingredients:
- 500g shrimp, peeled and cleaned
- 2 cups long-grain rice
- 4 cups chicken broth
- 3 tbsp butter
- 4 cloves garlic, minced
- 1 small onion, chopped
- 1 tsp paprika
- Salt and black pepper
- Fresh parsley for garnish
- Lemon wedges
Instructions:
- Melt butter in a large skillet and sauté onion until soft.
- Add garlic and cook for 30 seconds.
- Stir in rice and cook for 2 minutes.
- Pour in chicken broth, season with paprika, salt, and pepper.
- Cover and cook for 15–18 minutes until rice is tender.
- In another pan, cook shrimp in a little butter for 2–3 minutes per side.
- Mix shrimp with the rice and garnish with parsley.
- Serve with fresh lemon wedges.
