Loaded Bacon & Potato Gratin

Ingredients

  • 800 g baby potatoes, thinly sliced
  • 200 g crispy bacon, chopped
  • 250 ml heavy cream
  • 150 ml milk
  • 2 garlic cloves, minced
  • 1 small onion, finely diced
  • 250 g cheddar cheese, shredded
  • 100 g mozzarella cheese, shredded
  • 50 g Parmesan cheese, grated
  • 2 tbsp butter
  • 1 tsp smoked paprika
  • 1 tsp fresh thyme
  • Salt and black pepper to taste
  • Chopped chives for garnish

Instructions

  1. Preheat the oven to 190°C (375°F).
  2. Sauté the bacon until crispy. Remove and cook the onion and garlic in the bacon drippings until soft.
  3. In a bowl, whisk together the heavy cream, milk, paprika, thyme, salt, and pepper.
  4. Butter a baking dish and arrange half of the potato slices.
  5. Sprinkle with half of the bacon, onion mixture, cheddar, and mozzarella.
  6. Repeat the layers and pour the cream mixture evenly over the top.
  7. Finish with Parmesan cheese.
  8. Cover with foil and bake for 45 minutes.
  9. Remove the foil and bake for another 20 minutes until the top is golden and bubbling.
  10. Garnish with fresh chives and serve hot.
