French Onion Chicken Gratin

Ingredients

  • 4 boneless chicken breasts
  • 2 large onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 250 ml beef or chicken broth
  • 150 ml heavy cream
  • 1 tsp Worcestershire sauce
  • 1 tsp fresh thyme
  • 200 g Gruyère cheese, grated
  • 100 g mozzarella cheese, shredded
  • 30 g Parmesan cheese, grated
  • Salt and black pepper, to taste
  • Fresh parsley, chopped

Instructions

  1. Preheat the oven to 190°C (375°F).
  2. Season the chicken with salt and pepper, then sear it in olive oil until golden on both sides. Set aside.
  3. In the same skillet, melt the butter and slowly caramelize the onions for 20–25 minutes.
  4. Add the garlic, Worcestershire sauce, thyme, and broth. Simmer for 5 minutes.
  5. Stir in the heavy cream and cook for another 2 minutes.
  6. Place the chicken in a baking dish and spoon the onion sauce over each piece.
  7. Top generously with Gruyère, mozzarella, and Parmesan.
  8. Bake for 20–25 minutes, until the chicken is cooked through and the cheese is golden and bubbling.
  9. Garnish with fresh parsley and serve with mashed potatoes, rice, or crusty bread.
