Garlic Butter Beef Tips with Roasted Potatoes

Ingredients

  • 600 g beef sirloin, cut into bite-sized pieces
  • 500 g baby potatoes, halved
  • 3 tbsp olive oil
  • 3 tbsp butter
  • 5 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp rosemary
  • 120 ml beef broth
  • Salt and black pepper to taste
  • Fresh parsley, chopped

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Toss the potatoes with 1 tablespoon olive oil, paprika, salt, and pepper. Roast for 30–35 minutes until golden.
  3. Season the beef with salt and pepper.
  4. Heat the remaining olive oil in a large skillet over high heat.
  5. Sear the beef for 2–3 minutes until browned. Remove and set aside.
  6. Melt the butter in the same skillet, then sauté the garlic, thyme, and rosemary for 30 seconds.
  7. Add the beef broth and simmer for 2 minutes.
  8. Return the beef to the skillet and coat with the garlic butter sauce.
  9. Serve with the roasted potatoes and garnish with fresh parsley.
