Berry Stuffed French Toast Stack
Ingredients
For the French Toast
- 8 slices brioche bread
- 3 eggs
- 1 cup milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 2 tbsp butter
For the Filling
- 200 g cream cheese, softened
- 3 tbsp powdered sugar
- 1 tsp vanilla extract
For the Topping
- Fresh strawberries, sliced
- Fresh raspberries
- Pomegranate seeds
- Maple syrup or honey
- Powdered sugar
- Fresh mint leaves
Instructions
- Whisk together eggs, milk, vanilla, and cinnamon.
- Dip each slice of brioche bread into the mixture.
- Cook in a buttered skillet for 2–3 minutes per side until golden brown.
- Mix cream cheese, powdered sugar, and vanilla until smooth.
- Spread the cream cheese mixture between the toast slices.
- Stack the French toast layers on a serving plate.
- Top with strawberries, raspberries, pomegranate seeds, and mint leaves.
- Drizzle generously with maple syrup.
- Finish with a dusting of powdered sugar.
