Berry Stuffed French Toast Stack

Ingredients

For the French Toast

  • 8 slices brioche bread
  • 3 eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 2 tbsp butter

For the Filling

  • 200 g cream cheese, softened
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract

For the Topping

  • Fresh strawberries, sliced
  • Fresh raspberries
  • Pomegranate seeds
  • Maple syrup or honey
  • Powdered sugar
  • Fresh mint leaves

Instructions

  1. Whisk together eggs, milk, vanilla, and cinnamon.
  2. Dip each slice of brioche bread into the mixture.
  3. Cook in a buttered skillet for 2–3 minutes per side until golden brown.
  4. Mix cream cheese, powdered sugar, and vanilla until smooth.
  5. Spread the cream cheese mixture between the toast slices.
  6. Stack the French toast layers on a serving plate.
  7. Top with strawberries, raspberries, pomegranate seeds, and mint leaves.
  8. Drizzle generously with maple syrup.
  9. Finish with a dusting of powdered sugar.
