Creamy Mushroom & Spinach Gratin

Ingredients

  • 500 g mushrooms, sliced
  • 300 g fresh spinach
  • 250 ml heavy cream
  • 150 ml whole milk
  • 2 garlic cloves, minced
  • 1 small onion, finely chopped
  • 200 g Gruyère cheese, grated
  • 100 g mozzarella cheese, shredded
  • 50 g Parmesan cheese, grated
  • 2 tbsp butter
  • 1 tsp fresh thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped

Instructions

  1. Preheat the oven to 190°C (375°F).
  2. Melt the butter in a large skillet and sauté the onion until soft.
  3. Add the garlic and mushrooms, cooking until golden.
  4. Stir in the spinach and cook until just wilted.
  5. Add the heavy cream, milk, thyme, salt, and pepper. Simmer for 3–4 minutes.
  6. Transfer the mixture to a buttered baking dish.
  7. Sprinkle the Gruyère, mozzarella, and Parmesan evenly over the top.
  8. Bake for 20–25 minutes, then broil for 2–3 minutes until the cheese is golden and bubbling.
  9. Garnish with chopped parsley and serve hot.
