Pan-Seared Lemon Pepper White Fish with Asparagus

Ingredients

  • 2 white fish fillets (cod, haddock, tilapia, or any firm white fish)
  • 1 bunch fresh asparagus, trimmed
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 1 tbsp lemon pepper seasoning
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the fish fillets dry with paper towels.
  2. Season both sides with the lemon pepper seasoning and a little salt.
  3. Heat the olive oil with 1 tablespoon of butter in a large skillet over medium-high heat.
  4. Cook the fish for 3–4 minutes per side, or until golden brown and it flakes easily with a fork.
  5. While the fish cooks, sauté or steam the asparagus until tender-crisp. Season lightly with salt.
  6. Melt the remaining butter, then stir in the lemon juice and lemon zest.
  7. Pour the lemon butter sauce over the cooked fish.
  8. Garnish with chopped parsley and serve immediately with the asparagus.
