Mediterranean Pan-Seared Garlic Herb Fish

Ingredients

  • 1 large white fish fillet (sea bass, cod, or snapper)
  • 1 cup cherry tomatoes
  • ½ cup green olives
  • 3 garlic cloves, minced
  • 2 tbsp olive oil (or butter)
  • Fresh rosemary
  • Fresh thyme
  • Fresh parsley, chopped
  • Juice of ½ lemon

Seasoning

  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • Salt and black pepper to taste

Instructions

  1. Pat the fish dry with paper towels.
  2. Season both sides with paprika, onion powder, oregano, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Sear the fish for 3–4 minutes until golden.
  5. Flip the fish carefully.
  6. Add the cherry tomatoes, olives, garlic, rosemary, and thyme around the fish.
  7. Cook another 4–5 minutes until the tomatoes soften and release their juices.
  8. Turn off the heat and let the fish rest for 2 minutes.
  9. Sprinkle with fresh parsley and squeeze lemon juice over the top.
  10. Serve immediately with rice, roasted potatoes, or crusty bread.
