🧀🍝 Creamy Parmesan Chicken Spaghetti

Ingredients

For the Pasta:

  • 12 oz (340 g) spaghetti
  • Salt, for boiling water

For the Chicken:

  • 2 boneless, skinless chicken breasts, diced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and black pepper, to taste

For the Creamy Parmesan Sauce:

  • 1½ cups heavy cream
  • 1 cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 cup broccoli florets (optional)
  • Fresh parsley, chopped (for garnish)
  • Red pepper flakes (optional)

Instructions

  1. Cook the spaghetti in salted boiling water until al dente. Reserve ½ cup of pasta water, then drain.
  2. Season the chicken with salt, pepper, paprika, and Italian seasoning.
  3. Heat olive oil and butter in a large skillet over medium-high heat. Cook the chicken for 6–8 minutes until golden and fully cooked. Remove and set aside.
  4. In the same skillet, sauté the garlic for about 30 seconds until fragrant.
  5. Pour in the chicken broth and heavy cream. Simmer for 3–4 minutes.
  6. Stir in the Parmesan cheese, garlic powder, and onion powder until smooth.
  7. Add the broccoli (if using) and cook for 2–3 minutes until tender.
  8. Return the chicken to the skillet and stir to coat in the creamy sauce.
  9. Add the cooked spaghetti and toss everything together. If needed, add a splash of reserved pasta water to loosen the sauce.
  10. Garnish with chopped parsley, extra Parmesan, and red pepper flakes. Serve immediately and enjoy! 🍝🧀
