Vanilla Panna Cotta with Berry Sauce

Ingredients

For the Panna Cotta

  • 500 ml heavy cream
  • 250 ml whole milk
  • 80 g sugar
  • 1 tsp vanilla extract
  • 10 g gelatin powder (or 5 gelatin sheets)
  • 3 tbsp cold water

For the Berry Sauce

  • 1 cup raspberries or mixed berries
  • 2 tbsp sugar
  • 1 tbsp lemon juice

For Garnish

  • Fresh strawberries, sliced
  • Fresh raspberries
  • Mint leaves
  • Crushed biscuits or cookie crumbs

Instructions

  1. Sprinkle gelatin over cold water and let it bloom for 5 minutes.
  2. In a saucepan, heat the cream, milk, sugar, and vanilla until warm (do not boil).
  3. Remove from heat and stir in the gelatin until fully dissolved.
  4. Pour into molds or serving glasses.
  5. Refrigerate for at least 4–6 hours until set.
  6. For the sauce, cook berries, sugar, and lemon juice for 5 minutes.
  7. Blend and strain if desired.
  8. Unmold the panna cotta onto a plate.
  9. Drizzle with berry sauce and decorate with strawberries, raspberries, mint leaves, and cookie crumbs.
