Lime Meringue Bars
These Lime Meringue Bars feature a buttery shortbread crust, a silky smooth lime filling, and a light, toasted meringue topping. They’re the perfect balance of sweet and tangy, making them an elegant dessert for parties, holidays, or afternoon treats.
Ingredients
Shortbread Crust
- 1½ cups (190 g) all-purpose flour
- ½ cup (115 g) unsalted butter, softened
- ¼ cup (50 g) granulated sugar
- ¼ tsp salt
Lime Filling
- 1 can (14 oz / 397 g) sweetened condensed milk
- 4 large egg yolks
- ½ cup (120 ml) fresh lime juice
- 1 tbsp lime zest
Meringue
- 4 large egg whites
- ½ cup (100 g) granulated sugar
- ¼ tsp cream of tartar
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust
- Preheat the oven to 350°F (175°C).
- Mix the flour, sugar, and salt.
- Cut in the butter until crumbly.
- Press the mixture firmly into an 8×8-inch (20×20 cm) baking pan lined with parchment paper.
- Bake for 18–20 minutes, until lightly golden.
2. Make the Lime Filling
- Whisk together the condensed milk, egg yolks, lime juice, and lime zest until smooth.
- Pour over the warm crust.
- Bake for 12–15 minutes, until just set.
- Allow to cool slightly.
3. Make the Meringue
- Beat the egg whites with the cream of tartar until soft peaks form.
- Gradually add the sugar while beating until stiff, glossy peaks form.
- Mix in the vanilla.
4. Assemble
- Spread or pipe the meringue over the cooled lime filling.
- Toast the meringue with a kitchen torch, or place under the oven broiler for 1–2 minutes until golden.
- Chill for at least 2 hours before slicing into bars.
