Lemon Pesto Burrata Pasta
Ingredients
- 300 g spaghetti
- 1 cup basil pesto
- 1 ball burrata cheese
- 1 cup cherry tomatoes, halved
- Juice of ½ lemon
- 2 tbsp olive oil
- 2 tbsp grated Parmesan cheese
- Salt and black pepper, to taste
- Red pepper flakes (optional)
- Fresh basil leaves for garnish
Instructions
- Cook the spaghetti according to package directions until al dente. Reserve ¼ cup of pasta water.
- Toss the hot pasta with the pesto and lemon juice.
- Add a little pasta water if needed to create a silky sauce.
- Sauté the cherry tomatoes in olive oil for 2–3 minutes until slightly softened.
- Transfer the pasta to a serving plate and top with the tomatoes.
- Place the burrata cheese in the center of the pasta.
- Sprinkle with Parmesan cheese, black pepper, and red pepper flakes.
- Garnish with fresh basil leaves and serve immediately.
