Garlic Butter Chicken Fried Rice

Ingredients:

  • 3 cups cooked rice (cold)
  • 2 chicken breasts, diced
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tbsp soy sauce
  • Salt and black pepper
  • Green onions for garnish

Instructions:

  1. Heat 1 tbsp butter in a large pan and cook the chicken until golden. Remove and set aside.
  2. Add the remaining butter and sauté the garlic for 30 seconds.
  3. Add vegetables and cook for 2–3 minutes.
  4. Push everything to one side and scramble the eggs.
  5. Add the cooked rice and chicken.
  6. Pour in the soy sauce and stir well until everything is heated through.
  7. Garnish with green onions and serve hot.
