Pear, Brie & Cranberry Flatbread
Ingredients (Serves 4)
For the Flatbread
- 1 pizza dough or flatbread
- 2 tbsp olive oil
- 8 oz (225 g) Brie cheese, sliced
- 1 ripe pear, thinly sliced
- ⅓ cup dried cranberries
- ¼ cup sliced almonds
- 1 tbsp fresh thyme leaves
- Salt and freshly ground black pepper
For Finishing
- 2 tbsp honey
- Extra fresh thyme for garnish
- A handful of arugula (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Roll out the pizza dough and place it on a baking tray.
- Brush the dough lightly with olive oil.
- Arrange the Brie slices evenly over the dough.
- Top with the pear slices, dried cranberries, and sliced almonds.
- Sprinkle with fresh thyme, salt, and black pepper.
- Bake for 12–15 minutes, or until the crust is golden and the cheese is melted and bubbly.
- Drizzle with honey immediately after baking.
- Garnish with extra thyme and serve warm with a fresh arugula salad if desired.
