Falafel (Crispy Chickpea Fritters)
Ingredients
- 2 cups dried chickpeas (soaked overnight)
- 1 small onion, chopped
- 4 cloves garlic
- 1 cup fresh parsley
- ½ cup fresh cilantro
- 1 tsp cumin
- 1 tsp coriander
- ½ tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp baking powder
- 2 tbsp flour
- Oil for frying
Instructions
- Drain the soaked chickpeas well.
- Add chickpeas, onion, garlic, parsley, and cilantro to a food processor.
- Blend until finely minced but not completely smooth.
- Add cumin, coriander, paprika, salt, pepper, baking powder, and flour.
- Mix well and let the mixture rest for 30 minutes.
- Shape into small balls or patties.
- Heat oil to 180°C (350°F).
- Fry for 3–4 minutes until golden brown and crispy.
- Drain on paper towels and serve warm.
