Cheesy Stuffed Bell Peppers 🌶️🧀A hearty, cheesy dinner that’s perfect for the whole family.

Ingredients (Serves 4–6)

  • 4 large bell peppers, halved and seeds removed
  • 500 g (1 lb) ground beef or ground chicken
  • 1 cup cooked rice
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup mushrooms, chopped (optional)
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • ½ tsp black pepper
  • 1 tsp salt (or to taste)
  • 2 tbsp olive oil
  • ½ cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ÂĽ cup grated Parmesan cheese
  • Cherry tomatoes, halved (for topping)
  • Fresh parsley, chopped

Instructions

  1. Preheat the oven to 190°C (375°F).
  2. Lightly brush the bell pepper halves with olive oil and place them in a baking dish.
  3. Heat the remaining olive oil in a skillet. Sauté the onion until soft, then add the garlic and mushrooms.
  4. Add the ground beef and cook until browned. Drain excess fat if needed.
  5. Stir in the cooked rice, tomato sauce, Italian seasoning, paprika, salt, and pepper. Cook for 2–3 minutes.
  6. Fill each bell pepper generously with the meat and rice mixture.
  7. Top with mozzarella, cheddar, Parmesan, and a few cherry tomato halves.
  8. Cover with foil and bake for 30 minutes.
  9. Remove the foil and bake for another 10–15 minutes, or until the cheese is golden and bubbly.
  10. Garnish with fresh parsley and serve hot.
