Cheesy Stuffed Bell Peppers 🌶️🧀A hearty, cheesy dinner that’s perfect for the whole family.
Ingredients (Serves 4–6)
- 4 large bell peppers, halved and seeds removed
- 500 g (1 lb) ground beef or ground chicken
- 1 cup cooked rice
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1 cup mushrooms, chopped (optional)
- 1 tsp Italian seasoning
- 1 tsp paprika
- ½ tsp black pepper
- 1 tsp salt (or to taste)
- 2 tbsp olive oil
- ½ cup tomato sauce
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- ÂĽ cup grated Parmesan cheese
- Cherry tomatoes, halved (for topping)
- Fresh parsley, chopped
Instructions
- Preheat the oven to 190°C (375°F).
- Lightly brush the bell pepper halves with olive oil and place them in a baking dish.
- Heat the remaining olive oil in a skillet. Sauté the onion until soft, then add the garlic and mushrooms.
- Add the ground beef and cook until browned. Drain excess fat if needed.
- Stir in the cooked rice, tomato sauce, Italian seasoning, paprika, salt, and pepper. Cook for 2–3 minutes.
- Fill each bell pepper generously with the meat and rice mixture.
- Top with mozzarella, cheddar, Parmesan, and a few cherry tomato halves.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for another 10–15 minutes, or until the cheese is golden and bubbly.
- Garnish with fresh parsley and serve hot.
