Duck Breast with Cherry Sauce
Ingredients
For the Duck
- 2 duck breasts
- Salt and black pepper to taste
- 1 tsp fresh rosemary, chopped
For the Cherry Sauce
- 250 g fresh or frozen cherries
- 2 tbsp honey
- 120 ml chicken stock
- 1 tbsp balsamic vinegar
- 1 tbsp butter
- 1 tsp cornstarch mixed with 1 tbsp water
Instructions
- Score the duck skin in a crisscross pattern and season with salt and pepper.
- Place the duck skin-side down in a cold skillet.
- Cook over medium heat for 6–8 minutes until the skin is crisp and golden.
- Flip and cook for another 4–5 minutes for medium doneness.
- Remove the duck and let it rest for 5 minutes.
- In a saucepan, combine cherries, honey, stock, and balsamic vinegar.
- Simmer for 8–10 minutes until the cherries soften.
- Stir in the cornstarch mixture and cook until the sauce thickens.
- Finish with butter and rosemary.
- Slice the duck and serve with the warm cherry sauce spooned over the top.
