Duck Breast with Cherry Sauce

Ingredients

For the Duck

  • 2 duck breasts
  • Salt and black pepper to taste
  • 1 tsp fresh rosemary, chopped

For the Cherry Sauce

  • 250 g fresh or frozen cherries
  • 2 tbsp honey
  • 120 ml chicken stock
  • 1 tbsp balsamic vinegar
  • 1 tbsp butter
  • 1 tsp cornstarch mixed with 1 tbsp water

Instructions

  1. Score the duck skin in a crisscross pattern and season with salt and pepper.
  2. Place the duck skin-side down in a cold skillet.
  3. Cook over medium heat for 6–8 minutes until the skin is crisp and golden.
  4. Flip and cook for another 4–5 minutes for medium doneness.
  5. Remove the duck and let it rest for 5 minutes.
  6. In a saucepan, combine cherries, honey, stock, and balsamic vinegar.
  7. Simmer for 8–10 minutes until the cherries soften.
  8. Stir in the cornstarch mixture and cook until the sauce thickens.
  9. Finish with butter and rosemary.
  10. Slice the duck and serve with the warm cherry sauce spooned over the top.
