Duck Breast with Creamy Mushroom Risotto

Ingredients (Serves 2)

For the Duck:

  • 2 duck breasts
  • Salt and black pepper
  • 1 tsp fresh thyme

For the Risotto:

  • 1 cup Arborio rice
  • 3 cups warm chicken broth
  • 1 small onion, finely chopped
  • 2 tbsp butter
  • ½ cup Parmesan cheese, grated
  • 200 g mushrooms, sliced
  • 2 tbsp olive oil

Instructions

  1. Score the duck skin in a crisscross pattern. Season with salt, pepper, and thyme.
  2. Place duck skin-side down in a cold pan. Cook over medium heat for 6–8 minutes until the skin becomes crispy and golden.
  3. Flip and cook for another 3–5 minutes. Let rest before slicing.
  4. Sauté onions in butter until soft. Add mushrooms and cook until tender.
  5. Stir in the Arborio rice and cook for 1 minute.
  6. Add warm broth gradually, stirring frequently until the rice becomes creamy.
  7. Mix in Parmesan cheese and a little butter.
  8. Plate the risotto and top with sliced duck breast.
