Crème Brûlée Cheesecake

Ingredients

For the Crust

  • 250 g graham cracker crumbs
  • 100 g melted butter

For the Filling

  • 600 g cream cheese, softened
  • 200 ml heavy cream
  • 150 g granulated sugar
  • 3 eggs
  • 2 egg yolks
  • 1 tbsp vanilla bean paste (or 2 tsp vanilla extract)

For the Brûlée Topping

  • 80 g superfine sugar
  • Fresh berries (optional)
  • Fresh mint leaves

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. Mix the graham cracker crumbs with melted butter and press firmly into a springform pan.
  3. Bake the crust for 10 minutes, then let it cool.
  4. Beat the cream cheese until smooth.
  5. Add the sugar, eggs, egg yolks, vanilla, and heavy cream. Mix until silky.
  6. Pour the filling over the crust.
  7. Bake for 55–60 minutes, until the center is just set.
  8. Cool completely, then refrigerate for at least 6 hours.
  9. Sprinkle the superfine sugar evenly over the top and caramelize it with a kitchen torch until crisp and golden.
  10. Garnish with fresh berries and mint before serving.
