Creamy Peach Dessert
Ingredients
For the Peach Layer
- 500 g fresh peaches, peeled and diced
- 60 g granulated sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
For the Cream
- 500 g mascarpone cheese
- 250 ml heavy whipping cream (cold)
- 80 g powdered sugar
- 1 tsp vanilla extract
For the Base
- 250 g ladyfinger biscuits (or digestive biscuits)
- 150 ml peach juice (or milk) for dipping
For Decoration
- Fresh peach slices
- Mint leaves (optional)
- White chocolate shavings (optional)
Instructions
- In a saucepan, combine the diced peaches, sugar, and lemon juice. Cook over medium heat for 8–10 minutes until the peaches soften. Stir in the vanilla extract and let the mixture cool completely.
- In a large bowl, whip the heavy cream until soft peaks form.
- In another bowl, beat the mascarpone with the powdered sugar and vanilla until smooth. Gently fold in the whipped cream until light and fluffy.
- Quickly dip the ladyfingers into the peach juice and arrange a layer in the bottom of a serving dish.
- Spread half of the mascarpone cream over the biscuits, then spoon half of the peach mixture on top.
- Repeat the layers with the remaining biscuits, cream, and peaches.
- Decorate with fresh peach slices, mint leaves, and white chocolate shavings if desired.
- Refrigerate for at least 4–6 hours, preferably overnight, before serving.
