Classic Vanilla Panna Cotta
Ingredients (Serves 6)
- 500 ml heavy cream
- 250 ml whole milk
- 80 g granulated sugar
- 2 tsp vanilla extract (or 1 vanilla bean)
- 2½ tsp powdered gelatin (about 7 g)
- 3 tbsp cold water
Berry Topping
- 200 g mixed berries (strawberries, raspberries, or blueberries)
- 2 tbsp sugar
- 1 tbsp lemon juice
Instructions
- Sprinkle the gelatin over the cold water and let it bloom for 5–10 minutes.
- In a saucepan, combine the heavy cream, milk, sugar, and vanilla. Heat over medium heat until the sugar dissolves and the mixture is hot, but do not boil.
- Remove from the heat and stir in the bloomed gelatin until completely dissolved.
- Pour the mixture into serving glasses or ramekins.
- Refrigerate for at least 4–6 hours, or overnight, until fully set.
- For the berry topping, cook the berries with the sugar and lemon juice for 5–7 minutes until slightly thickened. Let cool completely.
- Spoon the berry sauce over the chilled panna cotta before serving.
