Classic Vanilla Panna Cotta

Ingredients (Serves 6)
  • 500 ml heavy cream
  • 250 ml whole milk
  • 80 g granulated sugar
  • 2 tsp vanilla extract (or 1 vanilla bean)
  • 2½ tsp powdered gelatin (about 7 g)
  • 3 tbsp cold water
Berry Topping
  • 200 g mixed berries (strawberries, raspberries, or blueberries)
  • 2 tbsp sugar
  • 1 tbsp lemon juice
Instructions
  1. Sprinkle the gelatin over the cold water and let it bloom for 5–10 minutes.
  2. In a saucepan, combine the heavy cream, milk, sugar, and vanilla. Heat over medium heat until the sugar dissolves and the mixture is hot, but do not boil.
  3. Remove from the heat and stir in the bloomed gelatin until completely dissolved.
  4. Pour the mixture into serving glasses or ramekins.
  5. Refrigerate for at least 4–6 hours, or overnight, until fully set.
  6. For the berry topping, cook the berries with the sugar and lemon juice for 5–7 minutes until slightly thickened. Let cool completely.
  7. Spoon the berry sauce over the chilled panna cotta before serving.
