Mini Burgers Recipe

Ingredients
Burger Buns
  • 200 ml warm milk
  • 100 ml warm water
  • 21 g fresh yeast (or 7 g active dry yeast)
  • 80 ml sunflower oil
  • 40 g softened butter
  • 1½ tbsp sugar
  • 1 tsp salt
  • About 550 g all-purpose flour

For Brushing

  • 1 egg yolk
  • 1 tbsp milk
  • Sesame seeds
Burger Patties
  • 600–700 g ground beef
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp paprika
  • 1 tsp garlic powder
Burger Sauce
  • 120 g mayonnaise
  • 2 tsp ketchup
  • 2 tsp yellow mustard
  • 1 tsp finely chopped onion
  • 1 garlic clove, minced
  • 1 tbsp finely chopped pickles
  • 3 tsp pickle juice
  • ½ tsp sugar
  • Pinch of salt
  • Pinch of black pepper
  • ½ tsp paprika
Toppings
  • Lettuce
  • Tomato slices
  • Pickle slices
  • Caramelized onions (optional)
  • Cheddar cheese (optional)

Instructions
1. Make the Burger Buns
  1. Combine the warm milk, warm water, yeast, and sugar. Let sit for 5–10 minutes until foamy.
  2. Add the oil, butter, salt, and gradually mix in the flour until a soft dough forms.
  3. Knead for about 8–10 minutes until smooth.
  4. Cover and let rise for 40–50 minutes.
  5. Divide the dough into about 20 equal pieces and shape into balls.
  6. Place them on a parchment-lined baking tray, leaving space between each bun.
  7. Cover and let rise for another 30 minutes.
  8. Mix the egg yolk with the milk and brush over the buns. Sprinkle with sesame seeds.
  9. Bake in a preheated oven at 200°C (390°F) for about 15 minutes, or until golden brown.
2. Cook the Patties
  1. Mix the ground beef with the salt, pepper, paprika, and garlic powder.
  2. Form thin mini burger patties.
  3. Cook in a hot skillet over medium-high heat for 2–3 minutes per side, or until cooked through.
3. Make the Sauce

Mix together the mayonnaise, ketchup, mustard, onion, garlic, chopped pickles, pickle juice, sugar, salt, pepper, and paprika until smooth.

4. Assemble the Burgers
  1. Slice the mini buns in half.
  2. Spread the burger sauce on both halves.
  3. Add lettuce, tomato, the cooked patty, cheese (if using), pickles, and caramelized onions.
  4. Top with the other half of the bun and serve immediately.
