San Sebastian Cheesecake (Burnt Basque Cheesecake)

Recipe (Serves 8)
Ingredients
  • 600 g cream cheese, room temperature
  • 200 ml heavy cream
  • 180 g sugar
  • 4 large eggs
  • 20 g all-purpose flour
  • 1 tsp vanilla extract
  • Pinch of salt
Optional Topping
  • Fresh strawberries
  • Blackberries
  • Raspberries
  • Chocolate sauce
Instructions
  1. Preheat the oven to 220°C (425°F).
  2. Line an 8-inch (20 cm) springform pan with parchment paper, letting it extend above the rim.
  3. Beat the cream cheese until completely smooth.
  4. Add the sugar and mix well.
  5. Beat in the eggs one at a time.
  6. Stir in the heavy cream and vanilla.
  7. Sift in the flour and salt, then mix until silky smooth.
  8. Pour the batter into the prepared pan.
  9. Bake for 35–40 minutes until the top is deeply caramelized while the center remains slightly jiggly.
  10. Cool completely, then refrigerate for at least 6 hours (overnight is best).
  11. Garnish with fresh berries and serve with warm chocolate sauce if desired.
