San Sebastian Cheesecake (Burnt Basque Cheesecake)
Recipe (Serves 8)
Ingredients
- 600 g cream cheese, room temperature
- 200 ml heavy cream
- 180 g sugar
- 4 large eggs
- 20 g all-purpose flour
- 1 tsp vanilla extract
- Pinch of salt
Optional Topping
- Fresh strawberries
- Blackberries
- Raspberries
- Chocolate sauce
Instructions
- Preheat the oven to 220°C (425°F).
- Line an 8-inch (20 cm) springform pan with parchment paper, letting it extend above the rim.
- Beat the cream cheese until completely smooth.
- Add the sugar and mix well.
- Beat in the eggs one at a time.
- Stir in the heavy cream and vanilla.
- Sift in the flour and salt, then mix until silky smooth.
- Pour the batter into the prepared pan.
- Bake for 35–40 minutes until the top is deeply caramelized while the center remains slightly jiggly.
- Cool completely, then refrigerate for at least 6 hours (overnight is best).
- Garnish with fresh berries and serve with warm chocolate sauce if desired.
