Chocolate Cherry Muffins
Ingredients
Cherry Filling
- 150 g cherries (fresh or frozen)
- 35–40 g sugar
- 1 tsp cornstarch
- 1 tbsp water
Muffin Batter
- 2 eggs
- 120 g sugar
- 100 ml vegetable oil
- 120 ml milk
- 100 g sour cream (or Greek yogurt)
- 220 g all-purpose flour
- 40 g unsweetened cocoa powder
- 10 g baking powder
- Pinch of salt
- 140 g cherries, tossed with 1 tsp cornstarch
- 100 g dark chocolate, chopped
Chocolate Topping
- 150 g chocolate ganache or chocolate buttercream
- Fresh cherries for decoration
Instructions
- Prepare the cherry filling: Combine the cherries, sugar, cornstarch, and water in a saucepan. Cook over medium heat, stirring until thickened. Let cool completely.
- Make the batter: In a large bowl, whisk together the eggs, sugar, oil, milk, and sour cream until smooth.
- Sift together the flour, cocoa powder, baking powder, and salt. Fold the dry ingredients into the wet ingredients until just combined.
- Gently fold in the chopped dark chocolate and the cherries coated with cornstarch.
- Divide the batter among 10 muffin liners, filling each about ¾ full.
- Bake at 200°C (392°F) for 5 minutes, then reduce the oven to 180°C (356°F) and continue baking for 20–22 minutes, or until a toothpick comes out clean.
- Cool completely. Pipe chocolate ganache or buttercream on top and garnish with fresh cherries.
These muffins are incredibly moist, rich in chocolate flavor, and filled with juicy cherries for the perfect sweet-tart bite.
