Chocolate Cheesecake

Ingredients (Serves 10–12)
For the Crust
  • 2 cups chocolate cookie crumbs (such as Oreo, filling removed)
  • ½ cup unsalted butter, melted
For the Filling
  • 24 oz (680 g) cream cheese, softened
  • 1 cup granulated sugar
  • ½ cup sour cream
  • 8 oz (225 g) dark chocolate, melted and cooled
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder
  • Pinch of salt
For the Chocolate Ganache
  • ½ cup heavy cream
  • 5 oz (140 g) dark chocolate, chopped
  • Chocolate curls or cocoa powder, for garnish
Instructions
  1. Preheat the oven to 325°F (160°C). Grease a 9-inch (23 cm) springform pan.
  2. Mix the chocolate cookie crumbs with the melted butter and press firmly into the bottom of the pan. Chill for 10 minutes.
  3. Beat the cream cheese and sugar until smooth.
  4. Add the sour cream, melted chocolate, cocoa powder, vanilla, and salt. Mix until combined.
  5. Add the eggs one at a time, mixing on low speed after each addition.
  6. Pour the filling over the crust and smooth the top.
  7. Bake for 50–60 minutes, until the edges are set and the center has a slight wobble.
  8. Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
  9. Refrigerate for at least 6 hours, preferably overnight.
  10. Heat the heavy cream until just simmering, pour over the chopped chocolate, let stand for 2 minutes, then stir until smooth. Spread over the chilled cheesecake.
  11. Garnish with chocolate curls or a dusting of cocoa powder before serving.
