Peach Cream Cheese Crumble Bars
Ingredients (Makes 12 Bars)
For the Crust & Crumble
- 2½ cups all-purpose flour
- 1 cup unsalted butter, cold and cubed
- ¾ cup brown sugar
- ½ tsp salt
- 1 tsp vanilla extract
For the Filling
- 2 cups fresh peaches, peeled and diced
- 8 oz (225 g) cream cheese, softened
- ⅓ cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 tbsp cornstarch
- 1 tsp lemon juice
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch (20×20 cm) baking pan with parchment paper.
- In a bowl, combine the flour, brown sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the vanilla.
- Press about two-thirds of the crumble mixture into the prepared pan to form the crust.
- Beat the cream cheese, sugar, egg, and vanilla until smooth. Spread evenly over the crust.
- Toss the diced peaches with the cornstarch and lemon juice, then scatter them over the cream cheese layer.
- Sprinkle the remaining crumble mixture evenly over the top.
- Bake for 40–45 minutes, or until the top is golden brown and the filling is set.
- Let the bars cool completely, then refrigerate for at least 2 hours before slicing.
