Blackberry Cheesecake

Ingredients

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 tbsp sugar

For the Filling:

  • 24 oz (680g) cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

For the Blackberry Topping:

  • 2 cups fresh blackberries
  • 1/3 cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Mix graham cracker crumbs, butter, and sugar. Press into a springform pan.
  3. Bake the crust for 10 minutes and let cool.
  4. Beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, then vanilla and sour cream.
  6. Pour filling over the crust.
  7. Bake for 50–60 minutes until the center is slightly set.
  8. Cool completely, then refrigerate for at least 4 hours.
  9. For the topping, cook blackberries, sugar, and lemon juice over medium heat.
  10. Stir in the cornstarch mixture and cook until thickened.
  11. Let cool, then spread over the cheesecake.
  12. Garnish with fresh blackberries before serving.
