Chocolate Cheesecake
Ingredients (Serves 10–12)
For the Crust
- 2 cups chocolate cookie crumbs (such as Oreo, filling removed)
- ½ cup unsalted butter, melted
For the Filling
- 24 oz (680 g) cream cheese, softened
- 1 cup granulated sugar
- ½ cup sour cream
- 8 oz (225 g) dark chocolate, melted and cooled
- 3 large eggs
- 1 tsp vanilla extract
- 2 tbsp unsweetened cocoa powder
- Pinch of salt
For the Chocolate Ganache
- ½ cup heavy cream
- 5 oz (140 g) dark chocolate, chopped
- Chocolate curls or cocoa powder, for garnish
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9-inch (23 cm) springform pan.
- Mix the chocolate cookie crumbs with the melted butter and press firmly into the bottom of the pan. Chill for 10 minutes.
- Beat the cream cheese and sugar until smooth.
- Add the sour cream, melted chocolate, cocoa powder, vanilla, and salt. Mix until combined.
- Add the eggs one at a time, mixing on low speed after each addition.
- Pour the filling over the crust and smooth the top.
- Bake for 50–60 minutes, until the edges are set and the center has a slight wobble.
- Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
- Refrigerate for at least 6 hours, preferably overnight.
- Heat the heavy cream until just simmering, pour over the chopped chocolate, let stand for 2 minutes, then stir until smooth. Spread over the chilled cheesecake.
- Garnish with chocolate curls or a dusting of cocoa powder before serving.
