Loaded Chicken Bacon Stuffed Baked Potatoes
Ingredients
- 4 large russet potatoes
- 2 cups cooked chicken breast, diced
- 6 slices turkey bacon or beef bacon, cooked and crumbled
- 2 cups shredded cheddar cheese
- ½ cup sour cream
- ¼ cup cream cheese, softened
- 2 tbsp butter
- 2 green onions, chopped
- 1 tsp garlic powder
- ½ tsp paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped
Topping
- Sour cream or ranch dressing
- Extra bacon crumbles
- Chopped green onions

Instructions
- Preheat the oven to 400°F (200°C).
- Scrub the potatoes, prick them with a fork, rub with a little olive oil and salt, then bake for 50–60 minutes until tender.
- Slice each potato open lengthwise and carefully scoop out most of the flesh, leaving a thin shell.
- In a large bowl, mash the potato flesh with butter, cream cheese, sour cream, garlic powder, paprika, salt, and pepper.
- Fold in the diced chicken, bacon, green onions, and 1½ cups of the cheddar cheese.
- Spoon the filling back into the potato skins.
- Top with the remaining cheddar cheese.
- Bake for 15–20 minutes until the cheese is melted and bubbly.
- Drizzle with sour cream or ranch dressing and garnish with bacon, parsley, and green onions before serving.
