Loaded Bacon & Potato Gratin
Ingredients
- 800 g baby potatoes, thinly sliced
- 200 g crispy bacon, chopped
- 250 ml heavy cream
- 150 ml milk
- 2 garlic cloves, minced
- 1 small onion, finely diced
- 250 g cheddar cheese, shredded
- 100 g mozzarella cheese, shredded
- 50 g Parmesan cheese, grated
- 2 tbsp butter
- 1 tsp smoked paprika
- 1 tsp fresh thyme
- Salt and black pepper to taste
- Chopped chives for garnish
Instructions
- Preheat the oven to 190°C (375°F).
- Sauté the bacon until crispy. Remove and cook the onion and garlic in the bacon drippings until soft.
- In a bowl, whisk together the heavy cream, milk, paprika, thyme, salt, and pepper.
- Butter a baking dish and arrange half of the potato slices.
- Sprinkle with half of the bacon, onion mixture, cheddar, and mozzarella.
- Repeat the layers and pour the cream mixture evenly over the top.
- Finish with Parmesan cheese.
- Cover with foil and bake for 45 minutes.
- Remove the foil and bake for another 20 minutes until the top is golden and bubbling.
- Garnish with fresh chives and serve hot.
