Citrus Salmon & Avocado Salad
Ingredients
- 2 salmon fillets (about 150 g each)
- 1 tbsp olive oil
- Salt and black pepper, to taste
- 1 tsp garlic powder
- 4 cups mixed greens
- 1 avocado, sliced
- 1 orange, peeled and segmented
- 1 grapefruit, peeled and segmented
- ½ cucumber, sliced
- ¼ red onion, thinly sliced
- ¼ cup pomegranate seeds
- 2 tbsp toasted almonds
- Fresh dill or parsley
Citrus Honey Dressing
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh orange juice
- 1 tbsp lemon juice
- 1 tbsp honey
- 1 tsp Dijon mustard
- Salt and black pepper
Instructions
- Season the salmon with garlic powder, salt, and pepper.
- Heat the olive oil in a skillet and sear the salmon for 4–5 minutes per side until golden and flaky.
- Arrange the mixed greens on a large serving platter.
- Add the avocado, orange segments, grapefruit, cucumber, red onion, pomegranate seeds, and toasted almonds.
- Place the warm salmon on top.
- Whisk together all the dressing ingredients and drizzle over the salad.
- Garnish with fresh dill or parsley and serve immediately.
