Citrus Salmon & Avocado Salad

Ingredients

  • 2 salmon fillets (about 150 g each)
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 tsp garlic powder
  • 4 cups mixed greens
  • 1 avocado, sliced
  • 1 orange, peeled and segmented
  • 1 grapefruit, peeled and segmented
  • ½ cucumber, sliced
  • ¼ red onion, thinly sliced
  • ¼ cup pomegranate seeds
  • 2 tbsp toasted almonds
  • Fresh dill or parsley

Citrus Honey Dressing

  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh orange juice
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and black pepper

Instructions

  1. Season the salmon with garlic powder, salt, and pepper.
  2. Heat the olive oil in a skillet and sear the salmon for 4–5 minutes per side until golden and flaky.
  3. Arrange the mixed greens on a large serving platter.
  4. Add the avocado, orange segments, grapefruit, cucumber, red onion, pomegranate seeds, and toasted almonds.
  5. Place the warm salmon on top.
  6. Whisk together all the dressing ingredients and drizzle over the salad.
  7. Garnish with fresh dill or parsley and serve immediately.
